Handmade 280mm/11" yanagi-ba (classic sushi or sashimi knife) of AEB-L stainless steel handled in locally sourced River Birch burl featuring an African Wenge ferule with green resin spacer. This blade profile is referred to as "urasuki" which describes it's concave shape on the left side. Overall length is 425mm/16.75". 7.0 oz.
Handmade 5" cleaver of stainless damascus folded by Damasteel in their Vinland pattern. The faceted handle is of Brazilian Rosewood with Copper bolster and pins. In keeping with the faceted handle the spine and the exposed tang are also faceted. The overall length is 10". 15 oz. 61 hrc.
Handmade 6" cleaver of stainless damascus folded by Damasteel in Vinland pattern. This cleaver features our signature clipped corner design with a spectacular hand milled bolster of Damasteel. The handle is of locally sourced Golden Raintree, given to us by our friends at Van Yahres Tree Co, featuring copper pins. The spacer is of black G10. The overall length is 11" with a weight of 17 oz.
Handmade 255mm /10" single bevel yanagi of AEB-L stainless steel. This yanagi is a single bevel right hand grind with the forge markings left intact. The backside of the blade features a urasuki grind creating a smooth surface for easily release food. This knife features an extra large octagon hidden tang handle of highly figured Amboyna burl with a Vegas Forge damascus ferule. The overall length is 406mm/16". 7.4 oz. HRC 61.
