Handmade 7.5" boning knife of recycled carbon saw blade and handled in FSC certified sustainable African Wenge with stainless pins and "Texas" style handle. Overall length of 11 3/4". Hardness of 54.
This knife was "cold" forged from and modern table saw blade. Because we did not have knowledge of the exact steel alloy formula used to make the blade we could not perform a proper heat treatment, so we left it as it was and tested the hardness which showed to 54 HRC. Hard enough to be a good boning or fillet knife.
