Handmade 140mm/5" honesuki kitchen knife of Nitro V stainless steel. This steel was developed for the culinary industry due to its exceptional hardness. This blade was hardened to 63! The handle is a blue G10 with a white g10 inlay. It measures 230mm/9" overall.
Handmade 140mm/5.5" honesuki of san mai steel (52100 carbon edge wrapped in stainless steel). This lightweight knife has a large hand handle of reclaimed Teak with a ferule of olive green micarta and a spacer of white G10. The overall length is 293mm/11.5". HRC 60-62. 3.5 oz.
