Handmade 6" boning knife of Carptenr BD-1 stainless steel. Locally sourced hardwoods from Charlottesville, Virginia. The handles are pinned using Corby bolts.

We approached our friend Daniel at Silverthorn Knife and Tool to make us a batch of his famed boning knives but we wanted them handled in our own wood which we cultivated from Zack's farm here in Charlottesville which was once land owned by Meriwether Lewis and his family. We sourced figured Black Walnut and clear grain Black Locust. Meriwether's home is actually called Locust Hill because there are so many locust trees there. These are great woods and look fabulous on the Silverthorn Boning Knife. 

These knives feature Carpenter Steels BD-1 which is a stainless alloy comparable to VG-10 from Japan is a very easy steel to sharpen and maintain its edge. You will not be let down by these knives!

Overall length is 10.75". HRC 58-60. Weight 3.0 oz.

These knives are made to order. Currently there is a 3-4 month lead time. the knife you receive will be exactly like what you see.
The Honesuki/ Petty or Utility
Handmade 6"/150mm Honesuki made of stainless damascus folded by Damasteel of Sweden in Sparse Twist pattern. The tapered octagonal handle is made of locally sourced figured Walnut from Zack's historic farm in Charlottesville and includes brass bolsters and hardware.

About the Fusion Design
The "Fusion Design Series" will concentrate on blending the best of Western and Asian knives. The series will eventually include three main profiles: The Gyuto (chef knife), the Honesuki (petty knife), and the Shotoh (paring knife). We believe these are the most important three knives any chef or home cook needs to start the foundation of a knife collection.

The included sheath is made of saddle leather and should be used for travel only.
