Handmade 8.5"/216mm Chef's Knife/Gyuto of AEB-L stainless steel. This series fuses the performance and geometry of an Eastern-inspired blade profile with the comfort and beauty of a Western style bolster and handle. The gyuto features a handle of domestic walnut sourced from Zack's farm in Charlottesville, VA. The hexagon handle is secured with brass corby bolts and bolsters to offer a nice weight for the knife to balance at the pinch point. A custom sheath is included for traveling with your knife, but should not be used for long term storage as it could cause rust. The overall length of the knife is 13.75"/349mm. HRC 61-62. 8 oz.

About the knife steel:
AEB-L is an awesome steel alloy from Sweden originally formulated as a blade steel for industrial applications, eventually making it way to become on of the most popular steel choices for custom kitchen knives. It is often preferred by many professional chefs and homecooks even over carbon. This steel is strong, durable and holds an awesome edge. It is will provide you with an excellent edge and is very easily serviced using a whetstone.
Even though this is a corrosion resistant steel alloy, It should never be left sitting in a sink full of water or a pot. Stainless steel can rust if misused or not cared for properly.
Our knives are not intended for, nor will they survive being put into a dishwasher! We offer a full warranty on our knives, however, damage due to negligence (rusting of blade) and or dishwasher use will require a repair fee.
